Cooking Directions for Double Cooking:
If you are double cooking, San Remo pasta should be prepared 2 - 4 hours before it is required. The general rule is to cook the pasta for slightly less than half the specified time, then cool off in cold water (this stops the cooking process) and drain. Once drained, mix with a small quantity of vegetable or olive oil to keep the pasta from sticking, then refrigerate immediately by storing the pasta in a suitable container covered at 4 degrees Celcius.

Once you are ready to reheat, the pasta will need around 1-2 minutes in boiling water prior to serving. Reheat in small batches, remembering that when adding subsequent batches of pasta, it will lower the water temperature – so make sure you have allowed the water to return to the boil before further additions. It is important to note when pre-cooking pasta not to overcook it as this will result in poor texture.
